Ingredients:
8 ounces of cream cheese at room temperature
1/4 cup fresh parsley leaves, chopped
2 tbsp. fresh lemon juice
1 tbsp heavy cream
1 tsp capers, rinsed and drained
4 ounces smoked salmon
Cocktail rye bread or Pita Bites
2 medium tomatoes, cored and sliced
2 medium onions, thinly sliced
Whole capers, rinsed and drained
Fresh dill
Directions: Combine first 5 ingredients with 3 ounces salmon and mix till well blended. Add final ounce of salmon and blend till just incorporated, retaining the salmon texture as much as possible. Spread salmon whip onto bread. Top with onion slices, sliced tomatoes, a sprig of dill and a few capers.
