Serves 4
Ingredients:
¼ cup vegetable oil
1.5 cups sliced onions
¼ cup plain yogurt
¼ cup chopped cilantro
1 tbsp lemon juice
1 jalapeno
2 cloves garlic, roughly chopped
1 tbsp grated ginger
1 tbsp curry powder
1 tsp salt
4 x approx 6oz Salmon portions
Fresh cilantro for garnish
Directions:
Heat oil over medium-high and sauté onions until browned and slightly crispy. Remove onions and about 1 tbsp oil and set aside to cool.
In a food processor, puree together onions and remaining ingredients (not the salmon) until smooth.
Put the pre-cut salmon portions into a tray and coat thoroughly with the marinade. Marinate in fridge For at least 1 hour but 5-8 hours is better.
Take marinated salmon out of fridge 1 hr before cooking. Preheat greased grill to 400º and add fish. Cover, turn to low, and cook 15-20 minutes. This marinated fish will generally take longer than the usual way. Serve with a garnish of fresh cilantro sprigs
